Why microgreens are so good for you

Microgreens are harvested just days after sprouting, when the young plant is concentrating nutrients to grow.

A USDA and University of Maryland study found microgreens held roughly 4 to 40 times the vitamins and antioxidants of the same plants fully grown.

A good source of vitamins C, E and K, plus beta-carotene. Radish and sunflower are especially rich.
